Spiced Cranberry Muffins
Time: 45 mins
Ingredients
- 170 g dried cranberries
- 4 cups flour
- 1 cup sugar
- 4 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon mixed spice
- 1 1/2 cups skim milk
- 2 eggs
- 1/2 cup oil
- 1 cup low-fat plain yogurt
Directions
- 1 PReheat oven to 180 Degrees Celsius.
- 2 Spray 18 muffins tins with oil.
- 3 In bowl combine four, sugar, baking powder and spices.
- 4 Gently stir in cranberries.
- 5 Whisk togehter milk, eggs, oil and yoghurt.
- 6 Add to dry ingredients mixing until just combined.
- 7 Bake 30 - 35 minutes.
- 8 Leave in tins for 10 minutes before removing.
