Danish Bubble
Time: 20 mins
Ingredients
- 1 1/4 cups chopped onions
- 2 cups cold cooked potatoes
- 1/2 cup oil or 1/2 cup butter
- 1 -2 cup leftover meat such as roast beef
- 6 slices lightly cooked bacon, chopped
- salt and pepper
- 2 teaspoons Worcestershire sauce
- 4 eggs
- 1 bunch chives
- 1 cup grated cheddar cheese
Directions
- 1 Chop onions finely and dice meat and potatoes into 1 inch cubes.
- 2 Heat a third of the oil or butter in frying pan.
- 3 Brown the meat until golden brown and remove meat from pan.
- 4 Add another third of the oil or butter and brown the potatoes at high heat until they are golden and crispy on the outside. Remove potatoes from pan.
- 5 Add the remaining oil or butter to pan and cook the onions until clear.
- 6 Add meat, bacon, chives and potatoes to pan.
- 7 and heat through.
- 8 Season with salt, pepper and Worcestershire sauce.
- 9 Fry the eggs in butter, sunny side up and place on top of meat mixture.
- 10 (You can also scramble the eggs and mix all together).
- 11 Top all of this with the grated cheddar and serve hot.
