Corn and Red Pepper Medley

Ingredients
- 2 cups corn
- 1 tablespoon olive oil
- 2 large sweet red peppers, chopped
- 1/2 cup sweet onion, chopped
- 1 garlic clove, minced
- 1/8-1/4 cup fresh parsley, minced
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon pepper
Directions
- 1 In a large skillet, heat the oil and cook the corn for about 2 minutes.
- 2 Add the red peppers, onions, and garlic, and saute for 4-6 minutes.
- 3 Stir in the parsley, chili powder, salt and pepper and cook for another minute or two.
