Homemade Lemon Curd

Ingredients

  • 5 eggs
  • 3/4 cup caster sugar
  • 1 lemon, rind of, grated
  • 2/3 cup lemon juice
  • 125 g chilled butter, cut into small cubes

Directions

  • 1 Beat eggs and sugar until pale and doubled in volume.
  • 2 Stir in lemon rind and juice.
  • 3 Place bowl over a pan of simmering water.
  • 4 Add butter piece by piece, whisking constantly until thick.
  • 5 Serve cold.
