Blueberry Pudding Cake

Time: 1 hrs

Ingredients

  • 2 cups blueberries
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 cup flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 3 tablespoons butter or 3 tablespoons margarine, melted

Directions

  • 1 Toss the blueberries with cinnamon and lemon juice, and place in a greased 8 inch square cake pan.
  • 2 Combine flour, sugar and baking powder. Stir in milk and butter.
  • 3 Spoon over berries.
  • 4 Combine sugar and cornstarch, sprinkle over batter.
  • 5 Slowly pour boiling water over all.
  • 6 Bake at 350 degrees for 40-45 minutes or until cake tests done.
