Blueberry Pudding Cake
Time: 1 hrs
Ingredients
- 2 cups blueberries
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 cup flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/2 cup milk
- 3 tablespoons butter or 3 tablespoons margarine, melted
Directions
- 1 Toss the blueberries with cinnamon and lemon juice, and place in a greased 8 inch square cake pan.
- 2 Combine flour, sugar and baking powder. Stir in milk and butter.
- 3 Spoon over berries.
- 4 Combine sugar and cornstarch, sprinkle over batter.
- 5 Slowly pour boiling water over all.
- 6 Bake at 350 degrees for 40-45 minutes or until cake tests done.
