Empire State Muffins

Ingredients
- 2 cups shredded unpeeled apples
- 1 1/3 cups sugar
- 1 cup chopped cranberries or 1 cup any dried fruit or 1 cup raisins or 1 cup blueberries
- 1 cup shredded carrot
- 1 cup chopped nuts
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 2 eggs, lightly beaten
- 1/2 cup vegetable oil
Directions
- 1 In a large bowl combine apples and sugar.
- 2 Gently fold in cranberries, carrots and nuts.
- 3 Combine dry ingredients and add to bowl.
- 4 Mix well to moisten dry ingredients.
- 5 Combine eggs and oil and stir into apple mixture.
- 6 Fill 18 greased muffin tins 2/3 full.
- 7 Bake at 375 for 20- 25 minutes.
- 8 Cool 5 minutes before removing from tins.
