Empire State Muffins

Ingredients

  • 2 cups shredded unpeeled apples
  • 1 1/3 cups sugar
  • 1 cup chopped cranberries or 1 cup any dried fruit or 1 cup raisins or 1 cup blueberries
  • 1 cup shredded carrot
  • 1 cup chopped nuts
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil

Directions

  • 1 In a large bowl combine apples and sugar.
  • 2 Gently fold in cranberries, carrots and nuts.
  • 3 Combine dry ingredients and add to bowl.
  • 4 Mix well to moisten dry ingredients.
  • 5 Combine eggs and oil and stir into apple mixture.
  • 6 Fill 18 greased muffin tins 2/3 full.
  • 7 Bake at 375 for 20- 25 minutes.
  • 8 Cool 5 minutes before removing from tins.
