Black Bean Burgers

Ingredients

  • 3 (16 ounce) cans black beans, rinsed and drained
  • 1 1/2 cups uncooked oats
  • 1 medium onion, diced
  • 2 jalapeno peppers, seeded and diced
  • 1/2 cup chopped fresh cilantro
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 tablespoon vegetable oil
  • 8 hamburger buns

Directions

  • 1 Coarsely mash the beans with a fork or potato masher.
  • 2 Mix together the mashed beans, oats, and next 5 ingredients.
  • 3 Shape mixture into 8 patties.
  • 4 Mix together the flour and cornmeal; dredge patties in flour mixture.
  • 5 Let the oil get hot in a large non-stick skillet over medium-high heat; cook the patties for 5 minutes on each side or until lightly browned; drain on paper towels.
  • 6 Serve on buns ( toasted buns work well).
