Kale Pattie

Time: 1 hrs

Ingredients

  • 1 lb kale
  • 1 onion, grated
  • 1 egg
  • 2 tablespoons flour
  • 2 bread rolls
  • 2/3 cup shortening
  • 1 1/3 cups fine breadcrumbs
  • salt and pepper

Directions

  • 1 Boil kale in salted water for 10 minutes; drain.
  • 2 Soak bread rolls; squeeze dry.
  • 3 Chop the kale and rolls together finely.
  • 4 Add flour, egg, onion, salt and pepper and enough crumbs to make a stiff dough.
  • 5 Form into patties.
  • 6 Roll into remaining bread crumbs; brown in shortening.
