Fresh Herb Vinaigrette

Ingredients

  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • salt and pepper, to taste
  • 1/2 cup olive oil
  • 1/2 cup loosely packed fresh basil or 1/2 cup fresh dill or 1/2 cup cilantro leaf, finely chopped

Directions

  • 1 In a medium bowl, whisk together vinegar, Dijon, salt and pepper until mixed.
  • 2 In a steady stream, whisk in oil until blended.
  • 3 Whisk in herbs.
  • 4 Refrigerate up to 1 day.
