Fluffy Cheese and Tomato Scrambled Eggs

Time: 10 mins

Ingredients

  • 6 large eggs (or 1 1/2 cups egg substitute)
  • 3 tablespoons part-skim ricotta cheese
  • 1 plum tomato, seeded and chopped
  • 1 scallion, chopped
  • salt, to taste
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon paprika

Directions

  • 1 Heat a large nonstick skillet sprayed with nonstick cooking spray.
  • 2 In a mixing bowl, beat together eggs (or substitute) and ricotta cheese until smooth.
  • 3 Add remaining ingredients and mix well.
  • 4 Pour into skillet and cook/scramble until done.
