Fluffy Cheese and Tomato Scrambled Eggs

Ingredients
- 6 large eggs (or 1 1/2 cups egg substitute)
- 3 tablespoons part-skim ricotta cheese
- 1 plum tomato, seeded and chopped
- 1 scallion, chopped
- salt, to taste
- 1/8 teaspoon black pepper
- 1/8 teaspoon paprika
Directions
- 1 Heat a large nonstick skillet sprayed with nonstick cooking spray.
- 2 In a mixing bowl, beat together eggs (or substitute) and ricotta cheese until smooth.
- 3 Add remaining ingredients and mix well.
- 4 Pour into skillet and cook/scramble until done.
