Saffron Rice Pilaf

Time: 20 mins

Ingredients

  • 1 cup rice, uncooked
  • 2 cups boiling water
  • 2 chicken bouillon cubes
  • 1 medium onion, chopped
  • 1 tablespoon vegetable oil
  • 1/2 cup currants
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon saffron thread

Directions

  • 1 Saute onions in oil until golden.
  • 2 Add all other ingredients and simmer covered until all liquid is absorbed, about 12-15 minutes.
  • 3 Serve.
