Grilled Tuna With Tomato-Feta Relish

Ingredients
- 2 large tomatoes, peeled, seeded and chopped
- 1/2 cup crumbled feta
- 3 tablespoons parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh basil, chopped
- 1 tablespoon red wine vinegar
- 1 garlic clove, minced
- salt
- pepper
- 1 1/2 lbs firm fleshed fish or 1 1/2 lbs chicken or 1 1/2 lbs eggplants
Directions
- 1 In a medium bowl, stir together all relish ingredients, except for the fish or chicken.
- 2 Grill or broil fish or chicken or eggplant for about 3-4 minutes per side.
- 3 Serve with tomato-feta relish on top.
