Grilled Tuna With Tomato-Feta Relish

Ingredients

  • 2 large tomatoes, peeled, seeded and chopped
  • 1/2 cup crumbled feta
  • 3 tablespoons parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon red wine vinegar
  • 1 garlic clove, minced
  • salt
  • pepper
  • 1 1/2 lbs firm fleshed fish or 1 1/2 lbs chicken or 1 1/2 lbs eggplants

Directions

  • 1 In a medium bowl, stir together all relish ingredients, except for the fish or chicken.
  • 2 Grill or broil fish or chicken or eggplant for about 3-4 minutes per side.
  • 3 Serve with tomato-feta relish on top.
