Apple Oatmeal Bread

Ingredients

  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups oatmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup canola oil
  • 2 eggs
  • 5 -6 apples, peeled, cored and GRATED
  • 1/2 cup walnuts, chopped

Directions

  • 1 Preheat oven to 350. Grease and flour a 9 x 5 inch loaf pan.
  • 2 Mix all dry ingredients together.
  • 3 Lightly beat eggs in small bowl. Add oil and eggs to dry ingredients and stir until moistened. Fold in apples and nuts and pour into loaf pan.
  • 4 Bake 1 hour or until toothpick comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan. Cool on rack.
