Green Cilantro Rice

Time: 45 mins

Ingredients

  • 4 tablespoons butter
  • 1 -2 jalapenos, chopped or 1 (4 ounce) can of chopped green chilies
  • 3 cloves garlic, chopped
  • 1/2 cup onion, chopped
  • 2 cups long grain rice
  • 4 cups chicken stock
  • 1/2 teaspoon ground cumin
  • 1/4-1/2 teaspoon salt
  • 1/4-1/2 teaspoon pepper
  • 1/2 cup chopped cilantro

Directions

  • 1 Saute in butter the garlic, onion and jalapenos until soft.
  • 2 Add uncooked rice.
  • 3 Stir constantly until rice is slightly brown.
  • 4 Pour in chicken broth.
  • 5 Stir in the cilantro, cumin, salt and pepper.
  • 6 Pour in a baking dish if you pan is not oven friendly. Cover with a tight fitting lid.
  • 7 Bake at 350 for 30- 45 minutes until rice is soft.
  • 8 Fluff and serve hot.
