Mushroom Barley Soup

Ingredients
- 1/2 teaspoon oil
- 1 medium onion, diced
- 2 cups mushrooms, fresh and sliced
- 1/4 cup pearl barley
- 4 cups water
- 4 cups chicken broth or 4 cups vegetable broth
- black pepper, to taste
- 1 pinch thyme
- 1 bay leaf
Directions
- 1 Heat dutch oven or large pan over medium-high heat.
- 2 Add mushrooms and onions, cook until gold, about 3 minutes.
- 3 Add all other ingredients and bring to a boil.
- 4 Reduce heat to low, and simmer until the barley is tender, about 1-1/2 hours.
