Apple, Banana, Oatmeal Treat for One

Time: 14 mins

Ingredients

  • 1 granny smith apple (peeled and cubed)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1 small banana, sliced
  • 1 tablespoon walnuts, chopped (optional)
  • 1/2 cup quick oats
  • 1 cup vanilla-flavored soymilk (I use 8th continent light vanilla)
  • 1/4 teaspoon ground cinnamon

Directions

  • 1 Mix cubed apple with lemon juice and 1/4 tsp cinnamon, making sure apple is covered evenly.
  • 2 Cover, and microwave on high for 3 minutes.
  • 3 Remove from microwave and add sliced banana.
  • 4 Put aside.
  • 5 In separate bowl combine oatmeal, soymilk, and the other 1/4 tsp cinnamon.
  • 6 Mix well and microwave on high for 3 minutes.
  • 7 Combine apple, banana mixture with oatmeal. Add chopped walnuts.
  • 8 Enjoy.
