Ingredients
- 5 eggs
- 3/4 cup caster sugar
- 1 lemon, rind of, grated
- 2/3 cup lemon juice
- 125 g chilled butter, cut into small cubes
Directions
- 1 Beat eggs and sugar until pale and doubled in volume.
- 2 Stir in lemon rind and juice.
- 3 Place bowl over a pan of simmering water.
- 4 Add butter piece by piece, whisking constantly until thick.
- 5 Serve cold.
